Our Bison Jerky is either hand cut or machine pressed, cured and smoked for 3-4 days and dried with hickory wood chips. The number of pieces in our one pound packages will vary due to the meat being hand cut and machine pressed. The Pressed or Strip Jerky is easier to tear off and chew. So, if you're a fella' or gal with soft teeth or are buying jerky for someone of that description go with Strip Jerky. Strip and Muscle come in two flavors; Regular and Spicy. If you're debating whether or not you can handle the spicy, Be Warned!, It is Spicy, so if you have to wonder, go Regular.
